Olive Oil Waffles with Dark Chocolate Sauce
Ingredients
- 1 cup 150g plain flour
- 1½ tsp baking powder
- 4 tsp sugar
- Pinch of salt
- 1 egg
- 1 cup 250ml milk
- ½ cup 125ml Wilson’s Olive Oil extra virgin
- 60 g dark chocolate
- 2 tbsp maple syrup
- ⅓ cup 80ml coconut cream or regular cream
- Splash of water optional, to thin
- Vanilla or coconut ice cream
- Fresh fruit or berries
Method
- In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- Crack in the egg, add the milk and Wilson’s Olive Oil, and stir gently until just combined. Don’t worry about a few lumps—resist the urge to overmix.
- Heat your waffle iron to a medium-high setting and lightly grease the plates with olive oil.
- Ladle in the batter and cook according to your machine’s instructions. You’re looking for a deep golden colour with crispy edges—about 3 to 4 minutes.
- While the waffles are cooking, make your chocolate sauce. Add the dark chocolate, maple syrup, and cream to a saucepan and melt over low heat, stirring until smooth. Add a splash of water if the sauce needs thinning.
- Serve the waffles hot, drizzled generously with the chocolate sauce and topped with a scoop of ice cream and fresh fruit if you’re feeling fancy.
