It handles heat well, which means it works as a cooking oil and a finishing oil. Start a pan sauce with it. Roast root vegetables in it — butternut, sweet potato, carrots — and watch the mustard caramelise into the edges. Make a dressing with two parts oil to one part Wilson’s Foods Balsamic Vinegar, a spoon of honey and some seasoning, shake it in a jar and use it on everything all week. Use it as a marinade base for chicken or pork — an hour in the oil with lemon and herbs and the flavour goes into the meat rather than sitting on the surface.
