This delicious Thai-inspired chicken curry is bursting with flavour, thanks to the combination of Wilson’s Coconut Flavoured Oil and fresh ingredients like green chilli, lemon leaves, and spring onions.
Perfect for a weeknight dinner or to impress guests, this curry is best served with jasmine rice and optionally garnished with coriander.
Ingredients
- 10ml Wilsons Extra Virgin Olive Oil
- 1 green chilli, deseeded and finely chopped
- 2 cloves garlic, finely chopped
- 30ml Thai Green curry paste
- 1 boned chicken breast cut into 4 pieces
- 4 chicken thighs, approximately 750g, cut into edible sizes
- 6 spring onions, sliced
- 150g green beans, trimmed
- 15ml fish sauce
- Juice of half a lemon
- 6 small lemon tree leaves
- 250g full cream yoghurt
- 30ml Wilson’s Coconut Flavoured Oil
- 200ml Chicken Stock
- Jasmine Rice, to serve
- Optional: Fresh Coriander to garnish
Preparation
Heat the oil: In a large pan, heat 10 ml Wilson’s Extra Virgin Olive Oil over medium heat. Add the Thai green curry paste, garlic, and chopped chilli. Fry for 1 minute until fragrant.
Add the chicken: Stir in the sliced spring onions and chicken pieces. Stir-fry with the paste for about 5 minutes, until the chicken begins to turn white.
Mix yoghurt and coconut oil: In a small bowl, mix the full cream yoghurt with 30 ml of Wilson’s Coconut Flavoured Oil.
Simmer the curry: Pour the yoghurt mixture into the pan along with 200 ml of chicken stock. Stir well, cover, and simmer on low heat for 15 minutes.
Cook the vegetables: Uncover and add the green beans. Cook for another 8 minutes, uncovered, until the beans are tender.
Add the final touches: Stir in the fish sauce, lemon juice, and lemon leaves. Cover and allow the curry to rest for 15 minutes before serving.
Serve: Serve the curry over jasmine rice. If desired, garnish with fresh coriander.
