Tonic water is already bitter and a little medicinal on its own. The ginger gives it somewhere to go.
The ginger lingers — you’ll notice it most in the last few sips, after the ice has melted slightly and the drink has opened up. That’s the part of the glass most cocktails lose interest in. This one doesn’t.
A Few Tips
Use blanco tequila — it’s cleaner and more citrus-forward than reposado or añejo. The aged varieties bring vanilla and oak notes that compete with the ginger lime rather than working with it.
Keep the tonic cold — warm tonic goes flat almost instantly. Keep the bottle in the fridge, not just the ice in the glass.
Ice first, always — fill the glass with ice before adding anything else. It chills the glass as you pour and stops the drink going watery too fast.
