Lime Tequila Tonic Recipe

A tequila tonic in a tall glass with ice, cucumber slices and a lime wedge

Gin and tonic gets all the credit. Tequila and tonic is the one that should. Same build, same logic — spirit, bitter tonic, ice — but the agave underneath changes the whole character of the drink. It’s brighter. A little more grown-up.

A tablespoon of Wilson’s Ginger Flavoured Lime Juice goes in alongside the tequila, in place of the usual lime squeeze. The ginger runs underneath the tonic’s bitterness rather than fighting it — it adds warmth where a plain lime would just add sharpness. Cucumber slices float on top, more for the look of the thing than anything else, though they do add a cool, green note that works well with the agave.

Two minutes from fridge to glass. No shaker, no syrup, nothing to measure precisely.

Ingredients

  • A large handful of ice
  • 50 ml tequila blanco
  • 1 tablespoon Wilson’s Ginger Flavoured Lime Juice
  • 100 ml tonic water chilled
  • 3 –4 slices cucumber
  • 1 lime wedge to serve (optional)

Method

  1. Fill a tall glass with ice.
  2. Pour over the tequila and the Wilson’s Ginger Flavoured Lime Juice.
  3. Top with the chilled tonic water and stir gently — don’t stir hard or you’ll knock the fizz out.
  4. Drop in the cucumber slices and serve with a lime wedge on the side, if using.

Notes

Use a blanco tequila here — it’s cleaner and more citrus-forward than a reposado or añejo, and it pairs better with the ginger and tonic.

For a non-alcoholic version, skip the tequila and top up with extra tonic or sparkling water. The cucumber and ginger lime still carry the drink.

Keep the tonic water in the fridge before you start — warm tonic goes flat fast and the drink loses its lift.

We Use Wilson’s Ginger Flavoured Lime Juice

Wilson’s Ginger Flavoured Lime Juice replaces the fresh lime squeeze in this drink — a tablespoon delivers the same citrus lift, plus a sharp ginger note that develops through the drink rather than disappearing after the first sip. Tonic water is already bitter and a little medicinal on its own. The ginger gives it somewhere to go.

The ginger lingers — you’ll notice it most in the last few sips, after the ice has melted slightly and the drink has opened up. That’s the part of the glass most cocktails lose interest in. This one doesn’t.

A Few Tips

Use blanco tequila — it’s cleaner and more citrus-forward than reposado or añejo. The aged varieties bring vanilla and oak notes that compete with the ginger lime rather than working with it.

Keep the tonic cold — warm tonic goes flat almost instantly. Keep the bottle in the fridge, not just the ice in the glass.

Ice first, always — fill the glass with ice before adding anything else. It chills the glass as you pour and stops the drink going watery too fast.

Don’t stir hard — a gentle stir or a swirl of the glass is enough. Stirring vigorously knocks the carbonation out of the tonic and the drink goes flat.

How We Serve It

In a tall glass, ice to the top, with the cucumber slices floating rather than muddled.

Good for a Friday afternoon on the stoep, a sundowner before the braai gets going, or anywhere a gin and tonic would normally show up. It scales easily into a jug if you’re making a round for the table — multiply everything except the ice, which you add fresh to each glass.

More Ways to Use Wilson’s Ginger Flavoured Lime Juice

Wilson’s Ginger Flavoured Lime Juice is good for more than this glass. A few other places it earns its spot:

Flavoured water — a tablespoon in a jug of cold water with pomegranate seeds and mint. The non-alcoholic version of this same idea.

Marinades — stirred through natural yoghurt with mint and crushed coriander seeds for chicken or lamb before the braai.

Salad dressings — whisked with olive oil and a little honey for anything that needs a citrus lift.

The Good Stuff

Wilson’s Ginger Flavoured Lime Juice is a concentrated lime juice with sharp ginger flavouring, sitting at 43’46°Brix. It’s dairy-free, vegan, gluten-free, Halaal and Kosher certified. Store in a cool, dry place, shake well before use, and refrigerate once opened.

Ways to Change It Up

Go non-alcoholic — leave out the tequila and top with extra tonic or sparkling water. The cucumber and ginger lime carry the drink on their own.

Try a flavoured tonic — a pink or herb-infused tonic water changes the character of the drink without changing the build.

Add fresh mint — a few leaves pressed gently into the glass alongside the cucumber adds another layer without much extra effort.

Make it a jug — multiply the tequila and Ginger Flavoured Lime Juice for a crowd, top with tonic just before serving so it doesn’t go flat.

Questions You Might Have

What tequila should I use?

Blanco (silver) tequila. It’s unaged, with a clean agave character and citrus notes that pair naturally with tonic water and the ginger lime. Reposado or añejo bring oak and vanilla that complicate the drink.

Can I make this without alcohol?

Yes — skip the tequila and top with extra tonic or sparkling water. It loses some depth but keeps the ginger lime and cucumber character.

Why is my drink flat?

Either the tonic was warm before you poured it, or you stirred too vigorously. Keep tonic chilled in the fridge and stir gently, or just swirl the glass once.

Can I prep this ahead for a party?

Slice the cucumber and have the tequila and Ginger Flavoured Lime Juice measured out ahead of time, but add the tonic last, just before serving each glass, so it doesn’t lose its fizz sitting around.
