Ingredients
- 4 Cups Romaine Lettuce Chopped
- 1 Cup Shelled Edamame (You can use shelled green beans as an alternative)
- ½ Cup Carrots Shredded
- 6 Radishes Thinly Sliced
- 1 Yellow or Orange Bell Pepper Thinly Sliced
- 2 Avocados Pitted and halved
- ½ Cup Red Cabbage Shredded
- 1 Cup Cucumber Thinly Sliced
- 1 Cup Cherry Tomatoes Thinly Sliced
Garnish
- 1/2 Cup Crushed Peanuts
- 1 Tbsp Toasted Sesame Seeds
Sesame Dressing
- 1/4 Cup Coconut Aminos
- 2 Tsp Rice Vinegar
- 2 Tsp Wilson’s Sesame Oil
- 1 Tsp Maple Syrup
- ½ Cup Wilson’s Extra Virgin Olive oil
1) Wash and Chop lettuce.Instructions
2) Shred Carrots and Red Cabbage.
3) Thinly slice cucumbers, bell peppers, cherry tomatoes, radish and avocado.
4) Make dressing by adding all dressing ingredients to a mason jar except oil.
5) Slowly add in the olive oil while whisking the dressing.
6) In a large bowl add in romaine lettuce.
7) In sections add in all of your vegetables including the edamame (or green beans).
8) Drizzle on sesame dressing and top with crushed peanuts and toasted sesame seeds.
