There’s a particular kind of salad that gets made because there’s an avocado on the counter that needs eating today, not tomorrow. This dressing is built for exactly that moment — five minutes, one blender, and the avocado does the heavy lifting on texture while everything else does the work on flavour.
Spring onion, green chilli, fresh mint, a tablespoon of Greek yoghurt, and two tablespoons of Wilson’s Ginger Flavoured Lime Juice blitzed together until smooth. Method

Wilson’s Ginger Flavoured Lime Juice goes in first, straight into the blender before the avocado — two tablespoons against four of olive oil sets the base before anything else goes in. The lime is what stops the dressing tasting flat and heavy; the ginger underneath it is what makes the whole thing taste considered rather than just blended.
You won’t necessarily identify the ginger as a separate flavour in the finished dressing — it sits underneath the mint and spring onion rather than standing apart from them. Leave it out and the dressing is noticeably less interesting, even if you couldn’t say exactly what’s missing.
A Few Tips
Use a ripe avocado — it should give slightly under gentle pressure. An underripe avocado blends grainy and won’t give you the smooth consistency this dressing depends on.
Loosen with water gradually — add it a tablespoon at a time and blitz between each addition. It’s much easier to add more water than to thicken a dressing that’s gone too thin.
Deseed the chilli if you want it milder — the seeds and white pith carry most of the heat. Leave them in if you want a sharper edge to the dressing.
Press cling film against the surface — before refrigerating, push the film directly onto the surface of the dressing to limit air contact. Avocado oxidises and browns quickly otherwise.
How We Serve It
Poured over a simple green salad, it does most of the work on its own — lettuce, cucumber, maybe some grilled corn, and this dressing turns it into something worth eating rather than something on the side.
It also works as a dip for vegetable crudités, or spooned generously over grilled chicken or fish straight off the braai. A grain bowl with roasted vegetables and this dressing is an easy, fast lunch on its own.

Ways to Change It Up
Make it vegan — swap the Greek yoghurt for a plant-based alternative or simply leave it out. The avocado already carries enough creaminess on its own.
Add more herbs — a handful of fresh coriander or basil blended in alongside the mint changes the character without changing the method.
Use it as a dip — keep it thicker by adding less water, and serve with crudités or warm flatbread instead of pouring it over a salad.
Dial up the heat — use a whole green chilli instead of half, or add a pinch of cayenne for more punch.

How long does this keep in the fridge?
Two days, with cling film pressed directly against the surface to limit air contact. The colour may darken slightly at the edges, but the flavour holds up well — stir before using.
Can I make this without a blender?
A stick blender in a tall jug works just as well, and is easier to clean. A food processor also works, though you may need to scrape down the sides once or twice.
My dressing turned brown — is it still good?
A thin browning layer on top is just oxidation and can be stirred back in or scraped off — the dressing underneath is fine. If it smells off or has changed texture significantly, discard it.
Can I freeze this dressing?
Not recommended — avocado-based dressings separate and go watery once thawed. It’s quick enough to make fresh that freezing isn’t really worth it.
