Chakalaka

A spicy South African vegetable relish of onion, peppers and carrot fried in Wilson's Garlic Flavoured Oil, then simmered with curry powder, tomato and baked beans.

Ingredients
  

  • 60 ml Wilson's Garlic Flavoured Oil
  • 2 onions finely chopped
  • 2 red peppers finely chopped
  • 2 carrots grated or finely julienned
  • 2 cloves garlic crushed
  • 2 tbsp curry powder
  • 1 tsp ground ginger optional
  • 2 tbsp tomato paste
  • 1 can 410g chopped tomatoes
  • 1 can 410g baked beans
  • 1 tsp sugar
  • 1-2 fresh chillies finely chopped (optional)
  • Salt to taste

Method
 

  1. Heat Wilson's Garlic Flavoured Oil in a large pot or deep pan over medium heat.
  2. Add the onions and peppers and fry for about 8 minutes, until softened and starting to turn golden.
  3. Stir in the carrot and garlic and cook for a further 3-4 minutes.
  4. Add the curry powder (and ginger if using) and fry for 1-2 minutes, stirring constantly, until fragrant.
  5. Stir in the tomato paste, chopped tomatoes, baked beans, sugar and chillies if using.
  6. Simmer uncovered for 15-20 minutes, stirring occasionally, until thickened and the carrot is tender but still has some bite.
  7. Season with salt to taste and serve warm or at room temperature.

Notes

Storage: keeps in the fridge for up to 5 days. Make-ahead: tastes even better the next day once the flavours have settled. Freezing: freezes well for up to 2 months. Serving suggestion: serve alongside braaied meat, pap or boerewors rolls.
